Over in the NL we do use Curry and Mayo together but then also sometimes add some onions (patat speciaal). This is also really tastefull on a frikandel speciaal.
We also have a patatje oorlog (pindasaus with curry and so).
Just find out for yourself.

With just chips? Yes ketchup is king.
However, if those chips are with something like bacon or sausages then it has to be a good splash of brown sauce :D

Mayo goes with just about everything.
Brown Sauce with anything greesy (fryup etc)
Red Sauce is for the looser. UNLESS ixed with mayo, then its great for burgers and kebabs!

Mayo DOES go with EVERYTHING (appart from possibly Cock au Vin and maybe alot of other things) but it does go well with a lot of food. Mainly things based around bolognaise; lasagne, chilli con carne, spag bol etc.
But on chips i'd say Ketchup.
The thousand island dressing mix of ketchup and mayo is also delightful (especially in one of those four pots of dips that you buy for dorito's)
mmmmmmmm...
for dipping doritos you can't beat that green snot like dip made from avocados (I'm not even going to attempt to spell it!)

Mayo and chilli sauce, ketchup and chilli sauce, salad cream and chilli sauce.
That or loads of salt and a vat of vinegar.
Pour gravy over Chips.... squirt mayo over chips (not into gravy) Yummmmy :D

Chips work well with balsamic or sherry vinegar (no salt) or a side of either Alioli or Green Mojo.
Has to be ketchup as a take away but as a sit down meal its got to be gravy. Awww its lush :P.
