Hmm, I'd say 10/0/61 (at 80 lvl of cos) is the easiest, and most solo capable build (permanent ghoul / very effiecient aoe). But in fact depends on playstyle as always ;-)
About the class you to choose, i think it's the one you enjoy playing most. I know it may sound very trivial, but sometimes people don't remember it. Anyway, as sheep said, blood is very easy for the level up, allowing you to solo almost every group quest.
