I will mention that a jailbroken iphone allows you to add:
Control Bar for quickly changing the network settings, brightness, closing locked apps etc. without the hassle of going into settings.
Backgrounder, so things like Fring can work in the background and you do get notifications as long as you have an internet link or 3G o Edge.
Cycorder - camcorder, not required with the 3GS but it's always been around for the jailbroken phone community.
BBC iPlayer is available on jailbroken iphones via what looks so like the BBC website in the app it's almost crimial
Winerboard so you can use custom ringtones and themes to customise the look and feel, not possible on iphone easily
iMuzik for music streaming for free
Abaia - the best chess app out there
