Go into single player, pick the armory and what you want to play with and it will generate random challenges.
To unlock all the armory stuff;

I find the challenges ridiculously tough, you choose SMAW, then are told to steal stuff from under the nose of 3 tanks.....
Or to do clay pigeon shooting with a SMAW - really!?!
