I hate the phone list interface and the music player with that annoying amazon mp3 !!
The problem with the phone list is how it defaults to the call history instead of the contacts! drives me nuts
Any of you android guys using alternative apps? are they anygood?
In other news i'm just trialling the ubuntu one music player and I have to say its awesome. Not yet decided whether its worth 3.99USD per month though.
I use Winamp for music on my HD - works a treat.
For phone contacts I've just got a shortcut to the 'People' app on my home screen.

Same, that's the default on my Hero.
I use Music Player Pro (https://market.android.com/details?id=com.tbig.playerpro&feature=search_result) £2.50 on the market. Skinnable and it has a very nice interface on the lock screen. Give it a look.
With the phone list try just start typing the person's name and it searches for you.
For music I am trying Winamp at the moment but it's lacking in features and doesn't work perfectly with headset. I had a trial of poweramp or poweranpdb or something and am considering the purchase...
Are there any good file managers for browsing the SD or drive?

I use ES file Explorer and find it brilliant! you can even browse files on your lan network
I would like to remove some of the apps that come as default on my HTC but the uninstall button is greyed out.
How do I get rid of stuff like stocks, twitter and so on?

I believe that will require the phone to be rooted and a custom ROM installed. So not a task that can be done with your existing set-up
