So I decided to look into disabling smb v1 entirely on our laptops and home server just to be extra sure about things...

On my Win7 laptop and the ubuntu server with samba shares the disabling all seemed to work okay, but on the 8.1 laptop when I follow the Microsoft instructions I can then no longer connect to the network drives... there's a few bits of pieces of info on google but none of it is particularly authoritative-sounding. The laptop fails to connect to the server (doesn't actually see the server computer on the network). However when I (re-)enable smbv1 following the same Microsoft instructions it all works fine again.

Anyone got any ideas, or tried doing this themselves?
