I'm thinking about getting a controller for all those games that don't really need mouse&keyboard, or which are better on a controller. I've dabbled in the past with non-xbox controllers but it always seems that games/windows supports xbox out the box (ie I don't need to fiddle with settings) but little else

I keep seeing reviews referring to xbox one, xbox one s, and xbox one core controllers as seemingly different hardware but on the MS website all I see is this:

...is that the one (haha) to buy?

I just use a wired xbox 360 controller, not to worried about the wireless part of things as I'm sat in front of the pc anyway.

Yeah that will work just fine, they connect via bluetooth.

Obviously this means your PC needs to support bluetooth, but if not a cheap USB dongle will do the trick.

I use a xbox1 and the charging cable

The older XBox controllers are pretty easy to find, but be aware of the physical differences between the BT version and non-BT: https://bigtechquestion.com/2020/04/24/gaming/consoles/which-xbox-one-controller-is-bluetooth/
